The DATA-MOD-STO4FOOD project aims to develop stochastic and statistical modelling approaches for food and wine sciences. Two themes are being developed:

• modelling of cellular population dynamics in the context of development/fermentation or destruction
• topological data analysis for spectroscopic imaging (DIMACELL)
