DATAVEG: Predicting the processability of plant proteins in analogue matrices using an experimental approach and multi-criteria analysis

This project involves developing an experimental approach that combines bibliographic data collection and targeted physicochemical analyses in order to establish structure–function–application relationships for a wide range of plant protein ingredients obtained through various processes (fermentation, germination, thermisation, dry and wet extraction). This project will provide orientation on the optimisation strategies for these new protein ingredients and assist manufacturers of finished products in selecting the ingredients best suited to the constraints of their application.
