FLAMME: Flavour metabolism in-mouth and perception modulation by oral microbiota enzymes

The FLAMME project aims to identify and characterise the enzymes in the oral microbiota involved in generating flavours in the mouth and to understand how their activity, modulated by the host's salivary parameters, influences the sensory perception of food.
