LANCET: Colloidal stability of wines with reduced alcohol content

The LANCET project aims to carry out a chemical and physicochemical characterisation of colloidal instability phenomena, to identify the matrix parameters that cause them to occur, and to further our understanding of the phenomenon in red wines with reduced alcohol content (partial or total dealcoholisation).
