The project aims to study the adaptation of oenological microorganisms to climate change. Three areas are addressed: (i) changes in must composition and their impact on yeast development during fermentation; (ii) evolution and adaptation of microorganisms to the matrix during fermentation; and (iii) microbial interactions and the evolution of the matrix during fermentation.
