PYNOTYPE

The PYNOTYPE project aims to characterise the phenolic composition of Pinot Noir grapes and wines and hybrid grape varieties produced in France in the context of adaptation to climate change. This project focuses on controlling the quality of food and wine matrices by studying the physicochemical parameters that determine the chemical environment in order to increase their intrinsic antioxidant capacity after functionalisation of their main ingredients (proteins and peptides). In addition, this project enhances the visibility and complementarity of research teams in Burgundy and Franche-Comté in order to meet the innovation needs of local and national wine and food industries.
