Summary

Sulfites, preservatives with antimicrobial and antioxidant properties, are subject to labelling regulations above 10 mg∙L-1 in wines because of their allergenic potential. Current analytical techniques are limited in terms of accuracy, speed and practicality.

The SUMO project aims to develop quantification method based on the use of sensor to monitor sulfites in wine in order to control and adjust doses to what it strictly necessary.
