TrapMWine: Bio-gel swelling metal chelators to improve wine safety and oxidative stability
The TrapMWine project aims to develop a device for trapping traces of transition metals in wines using bio-based chelating biopolymers: application in a context of quality, environment and sulphite reduction, potentially enabling better oxidative stability in Burgundy wines.
