Conference of the Lactic Bacteria Club
The 24th Colloque Club des bactéries lactiques was held from 12 to 14 June 2024 in Dijon at the CSGA. The event was organised by nine members of the UMR PAM, representing the Université de Bourgogne, Institut Agro Dijon and INRAE. More than a hundred researchers took part in the three days of discussions on these important bacteria for the food industry, human and animal health and the environment. This year's event was a great success, with stimulating discussions and excellent presentations.
Our thanks go to the guest speakers, who highlighted the diversity of the fields in which lactic bacteria are being explored, including :
- History of malolactic fermentation in wines (Michèle Guilloux-Bénatier, UMR PAM Dijon),
- Fermented plant foods for human consumption, from tradition to innovation to meet nutritional challenges (Christèle Humblot, IRD Montpellier),
- Structure of lactic bacteria phages and the communication systems of sS. thermophilus, the yoghurt bacterium (Rozenn Gardan, INRAE Institut Micalis),
- Food microbes (Bruno Pot, Yakult Europe, Netherlands).

Congratulations to Camille Eicher (UMR PAM, University of Burgundy, Institut Agro Dijon, INRAE) for the best oral presentation prize awarded by the Carnot Institute Qualiment and to Sandrine Parayre (INRAE STLO, L'Institut Agro Rennes-Angers) for the best poster prize awarded by Ferments du Futur.
We would also like to thank the University of Burgundy's Student Solidarity Commission, the Red Cross and the volunteers from Agorae Febia, who collected the unconsumed foodstuffs and distributed them to the student beneficiaries of the solidarity grocery.
