Vine and Wine division

Located within the IUVV Jules Guyot and backed by the Université de Bourgogne's experimental estate at Marsannay, the DIVVA platform's Vine and Wine division boasts scientific expertise and a highly technical analytical facility dedicated to the physico-chemical and molecular characterisation and metabolomic analysis of wine matrices and, more broadly, complex biological/biochemical systems.
This expertise is also based on close collaboration with the Comprehensive Foodomics Platform at the Technical University of Munich, headed by Professor Philippe Schmitt-Kopplin.
- Determination of molecules of interest in wines and spirits: aroma compounds, polyphenols, amino acids, peptides, sugars, sterols (UHPLC-Q-ToF-MS, UHPLC-DAD/UV/Fluo, MPS/GC-MS)
- Metabolomic characterisation of wines, spirits and biological and biochemical matrices from the agri-food or environmental sectors (UHPLC-Q-ToF-MS, FT-ICR-MS)
- Macromolecular profiles (proteins, polysaccharides)
- Steric exclusion chromatography with multi-angle detector (MALS), refractometer and UV detector
- Wine oxidative stability indices (DPPH, RPE)
- Experimental vinification (still and sparkling wines)
- Oenological analysis (sequential analyser, winescan, oenofoss)
