Kick off ANR PERSIST project led by a consortium of three academic partners: CSGA, PAM lab and MetaGenoPolis.
The aim of this 5-year project, funded by the French National Research Agency (ANR) and accredited by Vitagora, is to study the persistence and activity of bacteria present in fermented foods in the oral cavity of vegetarian and omnivorous subjects. More specifically, it will study the relationship between the microbiota and oral biology, consumption of fermented foods and taste.
